Guest chef Matt Weingarten will bring his artisanal cooking approach and passion for culinary traditions to Glynwood and team up with Glynwood executive chef Jodi Cummings to create an early spring meal featuring the farm’s own pasture-raised lamb.
Vegetarian meals are always available and all Farm Dinners are BYOB events.
Weingarten is culinary director for Innovative Solutions at Sodexo and national board chair of Chefs Collaborative, a nonprofit organization dedicated to making sustainable practices second nature for every chef in America. He has been involved with the Hudson Valley Chefs Network, which Glynwood established in partnership with Chefs Collaborative to engage and educate culinary professionals on the importance of regional agriculture. He is also the author of “Preserving Wild Foods: A Modern Forager's Recipes for Curing, Canning, Smoking, and Pickling.”
Cummings oversees the culinary program at Glynwood that aligns with the organization's mission of advancing sustainable food and farming. Educated at the Culinary Institute of America, she has extensive culinary experience throughout New York City, Connecticut and the Hudson Valley. She was previously the general manager and executive chef at Buttermilk Falls Inn & Spa, where she helped to start an organic garden from which the restaurant sourced fresh produce.
