PAWLING, N.Y. - How do you improve on what many believe is the best homemade marinara sauce ever to come out of a jar?

Vinny Lamorte of Vinny's Deli & Pasta found a way.

Lamorte just turned up the heat.

The popular family-run Pawling deli, in its 29th year of business, has long been the home of Vinny's own wildly popular - and shipped all over the world - Daryl's House Marinara Sauce (served at Hall's Club just minutes from the deli).

Now he's taking his game to the next level with his newest sensational sauce recipe - Vinny's Fra Diavolo sauce

"I wanted to take the sauce to the next level with something different," Lamorte told Daily Voice during a recent visit. "I really enjoy hot, spicy sauce. And there are very few good Fra Diavolo sauces on the market.

"So I played around with it, came up with a flavor," he added. "It took a little experimenting, but I finally got a great tasting Fra Diavolo sauce."

Customers have responded by grabbing every jar they can find.

It's not unusual for Lamorte to be filling jars of freshly cooked sauce right from the stove for waiting customers. And those who drive a distance tend to stock up.

Lamorte has still not even had labels printed for his newest nectar. But customers don't care.

"Everybody raves about it," Lamorte laughed. "Everyone who tries it... and anyone who likes hot food says it's the best one they've ever had.

"So I'm very proud of what I came up with," he added.

Vinny's Deli - also home of Vinny's Famous Steak Margarita sandwich (featured on the Food Network) - specializes in homemade mozzarella, fine olive oils, fresh pasta and pretty much anything you'd hope to find at an Italian deli.
